Chicago’s Red Door is hosting Chef’s Night Off, an ongoing series of “pop up” dinners one Monday a month (a night when Chef Troy Graves and his staff are off of work) that features menus from some of the city’s up and coming cooks. The next event, ¡Chingon!, will be on October 08th and will feature the talents of Steve Newman and Graham Stein, who bonded over their love of pork and punk rock.
¡Chingon! is Newman and Stein’s take on Mexican bar food through the prism of the modern day cuisine of the Michelin-starred and JBA-winning kitchens they’ve worked at. Slanted heavily and unapologetically towards pork and meant to satisfy the soul, the ¡Chingon! dinner will be a shared plates tasting menu, featuring two dishes per course to ensure that things move swiftly and the atmosphere remains lively. Each Chef’s Night Off event will feature different cooks and different concepts, as well as an original cocktail menu by Red Door mixologist Jay Schroeder.
