EXCLUSIVE: Former Moto Chef Chris Jones Announces Move To CA’s Hampton Creek Foods

Chris Jones, formerly the Chef de Cuisine at Chicago’s moto, as well as a chef-testant on this past season’s Top Chef, has announced that he has accepted an offer to be Hampton Creek Foods and Beyond Eggs’ Director of Culinary Innovation.

The move will uproot Jones and his family from the Chicago area, where he was raised (he went to high school in Grayslake, IL) to San Francisco, CA.

Beyond Eggs’ website states that they have done exhaustive research on how to replace eggs with plants.  Thus cutting down the use of water, making less of a carbon footprint, eliminating animal welfare issues, using less land, reducing waste and, even if none of that matters to you, reducing the cholesterol found in eggs to zero with their product.

Jones, who left moto earlier this year to spend more time with his wife and their young daughter, will be working at the company to spearhead new innovations in science to help improve our food and farming.  Below is Jones’ exclusive statement to Rock ‘n Roll Ghost about his new position and why he decided to accept it.  Jones will also show up in an upcoming feature here on his former employer at moto, Homaro Cantu.

I have accepted a position in San Francisco, CA working at Hampton Creek Foods & Beyond Eggs as their Director of Culinary Innovation.  Although I will miss my Chicago home, I am truly excited to accept this unique position in which I will become a key component in the new frontier when it comes to science within food and farming. I have always worked in restaurants and have created many beautiful dishes but I always knew there was something more.  I want to leave a legacy to my daughter and hopefully help sustain our Mother Earth’s rare gifts.  To have this opportunity is truly an honor because I hope that it shows that chefs can become a part of the solution and in fact need to be. I should be staring sometime in September and my family will be soon to follow.  Many thanks to all the blessings and support we have received while living in the city of Chicago, I truly feel like I will be leaving my home.
