Acadia, opened in Chicago’s south loop (1639 S Wabash Ave. specifically) has been open just shy of a month now and the word thus far has been positive. Headed by Executive Chef / Owner Ryan McCaskey (Rushmore, Courtright’s), the kitchen is busting out plates of carefully composed goodness to a warm reception thus far.
McCaskey, who grew up in Maine, is using his coastal memories to influence his menu. There’s a lobster roll on the bar menu, scallop and shrimp dishes featuring succulent delights flown in from Deer Isle, black cod as well as Stonington lobster pie (pictured at the top). Elsewhere on the menu finds charcuterie, the ubiquitous pork belly and foie gras, venison and more – including a brand new bar menu (food and drinks, minus the wine list, which is quite extensive, is below).
On top of this, the beverage department is firing on all cylinders with Michael Simon behind the bar. Simon, who worked at Graham Elliot as beverage director and did a short stint at the now defunct The Black Sheep (let’s just forget about that one, eh?), is doing some really cool sounding stuff with liquor and flavors (something about tomatillo agave – say what?).
I’m stopping by Acadia on Thursday evening with friends and will make a point to get there a little early to sit at the bar and chat Simon up. Looking forward to trying McCaskey’s food as well. Make a point to stop by soon.
