Matt Maroni Looks To Fill Street Food Gap With gaztro-wagon

Matt Maroni saw a gap in the food world of Chicago and decided to fill it.  Maroni left his job as Executive Chef at the Mid-America Club in Chicago and started chicagofoodtrucks.com, authoring an ordinance allowing food to be cooked-to-order in trucks.  That ordinance is under review at this time, but Maroni went ahead and started up gaztro-wagon, a storefront operation serving up quick, eclectic food (full menu is below) to the masses with the intention of taking that food and driving it around Chicago.

Rock ‘n Roll Ghost is sending along good thoughts to the truck ordinance getting passed.  It’s an exciting idea and one that I was surprised was new to the city.  After all, you see these in many of the country’s big cities.  But it would seem Chicago’s politicians are consistently looking to keep our fair city truly second.  Hopefully, with the passing (fingers crossed) of this ordinance, we can begin to move up the ladder.
