4-Course Dinner For Dietzler Farms Dinner At Province

Rescheduled from February, the Chicago restaurant will showcase a four-course farm dinner tomorrow, Tuesday, April 13th in conjunction with Dietzler Farms of Elkhorn, Wisconsin.  Michelle Dietzler will be there to discuss her farm-raised beef.  Spanish wines from Heritage Wine Cellars will be served with the dinner.

The dinner will start with a welcome reception at 6 p.m. with small bites of steak tartare toasts, braised oxtail taquitos and Brazilian black bean chili which will be paired with NV Macabeo Avinyo Brut Cava.

Dinner will begin at 6:45 p.m. with a first course of  spice-crusted seared flank steak salad with chopped spring vegetables, black grapes and
chile-vinaigrette, accompanied by 2008 Tempranillo Francois Lurton Rosado.

Second course is a grilled and marinated skirt steak with chimichurri and eggplant escalivada, a Catalan-style preparation of grilled, peeled and sliced vegetables. The wine pairing is 2006 Mourvèdre Telmo Rodriguez al Muvedre.

Barbecued short rib ropa vieja is the third course, served with sweet potato gratin, Province steak sauce and a 2005 Grenache/Cabernet Sauvignon/Merlo/Mazuelo/Syrah Capafons-Osso “Sirsell”.

The final course is a dessert of Spanish blue cheese flan with candied Marcona almonds and brioche quince toasts, served with NV Pedro Ximenez sherry, El Maestro Sierra.
